Utsunomiya Tobu Hotel Grande in Tochigi Prefecture has announced the return of its seasonal summer dessert series, “Summer Fruit Ice Flowers.” From June 1 to September 30, 2026, the hotel will serve authentic kakigori (shaved ice) made with natural ice from Mitsuboshi Himuro, a renowned ice house that sources from the spring waters of Nikko. This natural ice is noted for a light, fluffy texture and a clean melt-in-the-mouth quality that distinguishes it from standard frozen water.

The foundation of the series is the natural ice harvested by Mitsuboshi Himuro. Produced through a slow freezing process in the cold climate of Nikko, the ice achieves a high level of clarity and hardness. When shaved, it creates delicate, petal-like layers that retain their structure while providing a gentle mouthfeel. This traditional method of ice production is a hallmark of Tochigi’s culinary heritage, particularly during the humid summer months.

The 2026 collection features three distinct flavor profiles. “Crimson Drop” pairs strawberry with condensed milk for a classic sweetness. “Emerald Elegance” offers a more traditional Japanese profile, combining matcha with shiratama (rice flour dumplings) and azuki (sweet red beans). The third option, “Blue Radiance,” utilizes blueberry and condensed milk. Each bowl is priced at 1,800 JPY, inclusive of service charges and tax, and is designed to showcase the aesthetic of seasonal fruit through vibrant syrups and toppings.
