A Tropical Culinary Journey in Fukui

Courtyard by Marriott Fukui has announced a seasonal dining event, the “Hawaiian Lunch Buffet No Passport Required,” at its signature restaurant, Substance. Running on weekends and holidays from July 18 to September 13, 2026, the program introduces a menu that pairs authentic Hawaiian local dishes with seasonal ingredients sourced from Fukui Prefecture, offering a tropical dining experience on the hotel’s 15th floor.

Live Kitchen and Local Specialties

The buffet selection includes recognized Hawaiian staples such as garlic shrimp, loco moco, poke, and spam garlic rice. These are complemented by dishes featuring local Fukui salmon and seasonal peaches. At the live kitchen station, chefs prepare roast beef carved to order, served with a specialized Hawaiian sauce. The cold selection further integrates regional flavors with items like a smoked salmon salad topped with pineapple salsa, and a carpaccio of fresh fish and peaches.

Summer Family Specials and Holiday Dinner

To accommodate families during the summer holiday period, the hotel is offering a promotion where one elementary school student may dine free of charge for every paying adult. A dedicated station allows younger guests to create original ice cream desserts with various toppings. During the Obon period, from August 8 to August 16, the hotel will expand the program to include a daily dinner buffet. This 120-minute seating will feature an even broader array of tropical dishes and Hawaiian local favorites.

Panoramic Dining at Substance

Located on the 15th floor, the all-day dining venue Substance is designed around the concept of local production for local consumption. The restaurant’s large windows offer views across Fukui city toward the peaks of Mount Arashima and Mount Hakusan. The open kitchen environment is intended to provide a sensory experience where guests can observe the preparation of their meals from breakfast through dinner.
