Nara’s Oldest Soy Sauce Brewery Rebrands as UHN Nara Maruto Shoyu

In the quiet town of Tawaramoto, Nara, a brewery that has weathered three centuries is entering a new chapter. UHN Nara Maruto Shoyu, formerly known as Nipponia Tawaramoto Maruto Shoyu, officially rebrands this August, offering a deep dive into the spirituality of traditional livelihoods. Located within an ancient kominka (traditional house), the property allows guests to connect with the wisdom of the past while providing a contemporary space for relaxation.

A New Brand Concept Rooted in Heritage

The transition to the “UHN” brand marks a shift toward celebrating the culture of nariyawai, or traditional livelihoods. The rebranding is part of a broader effort to preserve regional resources and historical buildings that are increasingly disappearing across Japan. By maintaining the structure and function of Nara’s oldest soy sauce brewery, the property ensures that the legacy of the site continues to serve as a cultural anchor for the region.

Evolution of Culinary Experiences at MARUTO 1689

As part of the rebranding, the onsite restaurant has been renamed MARUTO 1689. Under the direction of Chef Toshihiro Ito, who brings experience from Michelin-starred kitchens, the culinary program has evolved from traditional washoku (Japanese cuisine) to innovative Italian-based fare. The menu explores the diverse possibilities of soy sauce, utilizing local ingredients and fermentation techniques to highlight the complex profiles of soybeans and wheat.

Immersive Brewing Stays and Cultural Deep Dives

The property remains a functional brewery, and guests are invited to participate in its seasonal rhythms. A new program, the “SHOYU BREWER STAY,” offers a limited two-night, three-day experience during the brewing season. Participants can engage in authentic brewing processes, learning the history and fermentation culture of the region firsthand. This initiative aims to satisfy intellectual curiosity through high-end hospitality and direct engagement with ancient craftsmanship.
