Sheraton Kagoshima has unveiled a new signature dish at its fourth-floor izakaya (casual Japanese pub), Satsumaguma. The “Sakurajima Kuronabe,” or Sakurajima Black Hot Pot, is designed as a culinary tribute to the prefecture’s most iconic landmarks and its renowned agricultural heritage. The dish combines Kagoshima’s three primary “black” proteins—beef, pork, and chicken—into a visual representation of the local landscape.

A Culinary Tribute to the Southern Landscape
The presentation of the hot pot mirrors the geography of Kagoshima. Slices of Kagoshima black beef and black pork are arranged to represent the towering peak of Mount Sakurajima. Surrounding this central feature is a specialized pork bone broth, intended to symbolize the waters of Kinko Bay. To complete the scene, charcoal-grilled Kagoshima black chicken is added to the pot, representing volcanic lava and providing a smoky depth to the overall flavor profile.
The Trio of Kagoshima Black Proteins
The Sakurajima Kuronabe focuses on the prefecture’s most celebrated ingredients. By incorporating black beef, black pork, and black chicken into a single meal, the dish offers a concentrated experience of regional umami. As the meats and fresh vegetables simmer, they create a rich, complex broth. Guests can conclude the meal by adding either noodles or zosui (rice porridge) to the remaining soup, ensuring no part of the flavor is lost.
Regional Accents and Customization
To allow for a multifaceted tasting experience, Satsumaguma serves the hot pot with eight distinct condiments. These local accents include house-made soy sauce koji (malted grain), aromatic bonito flakes, and yuzu kosho (a spicy citrus paste) grown in Kagoshima. A notable addition is Kagoshima matcha powder, which provides a refreshing fragrance that contrasts with the rich meats. These elements allow diners to adjust the flavor profile from the first bite to the final serving.
The Sakurajima Kuronabe is available as an a la carte option starting September 6, 2026, with a dedicated course menu scheduled to follow on October 1. Reservations can be made through the hotel’s website.
