Hotel Chorakukan, a member of Small Luxury Hotels of the World, has announced the 2026 summer return of its signature “Chorakukan Hyoka” series. Crafted by the hotel’s pastry chefs, this original dessert reimagines traditional Japanese kakigori (shaved ice) by layering it with elements of a classic French savarin. The dish is designed to evolve as it is eaten, transitioning from the light, airy texture of ice to the rich finish of a liqueur-soaked cake, offering the complexity of a multi-course dessert in a single serving.

A Fusion of Japanese Kakigori and French Pastry

The “Chorakukan Hyoka” distinguishes itself through its structural depth. Unlike standard shaved ice, which relies primarily on syrup, this version incorporates the French savarin—a yeast cake traditionally soaked in spirits. By placing the cake at the base, the chefs ensure that as the ice melts and the syrups permeate downward, the dessert transforms into a decadent, spirit-infused pastry. For a tropical alternative, the “Mango Framboise” layers mango tropical sauce and berry reductions with fresh mango fruit and mint. Both versions reveal the hidden base of savarin soaked in aromatic liqueur syrup, ensuring the flavors remain balanced and deep until the final bite.

Served at the Dessert Cafe Chorakukan, these seasonal delicacies are enjoyed within a building designated as a National Tangible Cultural Property. Built in 1909 as the villa of industrialist Murai Kichibei, the hotel blends various international architectural styles to create a grand, historic atmosphere. Located in Maruyama Park, the venue provides an escape for travelers seeking a taste of Kyoto’s modern culinary scene. The menu is available in limited quantities from June 1 to July 17, 2026, and includes options for coffee or tea pairings.
