Hotel Granvia Kyoto, which maintains a direct connection to Kyoto Station, will expand its culinary offerings on August 1, 2026, with the launch of a dedicated sushi counter at its signature restaurant, washoku (Japanese cuisine) Ukihashi. The space is designed to reflect the Mise-no-ma, a traditional entry area found in Kyoto’s machiya townhouses, creating a focused environment where guests can observe the techniques of professional sushi chefs. This addition aims to provide an immersive cultural experience for travelers seeking high-quality dining within the city’s primary transit hub.

Seasonal Menus and Regional Specialties
The culinary program emphasizes seasonal seafood and the use of locally grown Kyoto rice for the sushi. A central feature of the menu is saba-zushi (mackerel sushi), a staple of Kyoto’s food culture. The mackerel is cured in salt and aged overnight to develop its umami before being served. The dining options are divided into distinct lunch and dinner courses, each highlighting different aspects of Japanese seasonal ingredients.

The midday Sushi Gozen, priced at 7,000 yen, includes a sakizuke (appetizer), a steamed dish, and an omakase (chef’s choice) selection of ten sushi pieces, followed by soup and sweets. For the evening service, the Sushi Kaiseki (a multi-course meal) is offered at 16,000 yen. This progression includes appetizers, a fish dish, a small rice bowl, and ten pieces of omakase sushi, providing a more comprehensive exploration of seasonal flavors.


Curated Sake Pairings by Certified Kikisakeshi
To complement the sushi, the hotel’s kikisakeshi (sake sommelier) has assembled a collection of approximately 30 varieties of sake. The selection includes prominent labels from across Japan as well as local brews from Kyoto’s historic Fushimi district. A dedicated sake pairing service, starting from 7,000 yen, allows guests to experience glasses specifically chosen to harmonize with the flavors of the sushi and accompanying washoku dishes.
