Available from June 1 to August 31, 2026, the program centers on a philosophy of “authentic taste with freedom,” bridging the deep-rooted traditions of Kyoto with international ingredients and French preparation methods. This innovative approach seeks to provide a modern dining experience that remains firmly grounded in the spirit of washoku (traditional Japanese cuisine).

The concept of “Shinmi Jizai” allows for a departure from strict culinary conventions while honoring the seasonal integrity of local produce. Led by Executive Chef Yoshihiro Ishii, the kitchen staff utilizes global techniques to enhance the natural umami of Japanese ingredients. This results in a menu that balances the familiar aesthetics of Kyoto dining with unexpected textures and flavor profiles, tailored specifically for the summer season.

Seasonal Highlights: From Venison Consommé to Couscous Sushi

The menu features several inventive courses that demonstrate this technical fusion. A notable highlight is a cold vegetable bowl served with a clarified venison consommé jelly, which is prepared over two days using French methods to extract a concentrated savory profile. The selection also includes a chilled tomato and sea urchin soup thickened with kuzu (Japanese arrowroot starch), and a playful interpretation of chimaki-zushi (wrapped sushi). In this version, traditional rice is replaced with couscous and paired with kuruma prawn and Manganji peppers for a distinct textural contrast.
