OMO7 Kochi Debuts Herbal Shaved Ice with Ginger and Sansho

A Modern Twist on Traditional Tosa Herbs

From June 4 to August 31, 2026, OMO7 Kochi by Hoshino Resorts will present “Tosa Japanese Herb Shaved Ice” at its OMO Cafe & Bar. This seasonal initiative reimagines Kochi Prefecture’s most recognizable condiments—ginger, sansho (Japanese pepper), and shiso (perilla)—as the primary components of kakigori, or traditional Japanese shaved ice. Designed to provide relief during the peak summer heat, these creations utilize the aromatic and revitalizing properties of local herbs to offer a cooling experience for travelers exploring the city.

Three Signature Flavors: From Ginger to Shiso

The menu features three distinct varieties, each balancing traditional Japanese flavors with modern confectionery techniques. The “Hiyashi-ame” ginger shaved ice is topped with mascarpone cream and crispy imo kenpi (sweet potato strips), offering a play on textures. A strawberry shortcake-inspired version pairs sweet fruit with a refreshing shiso syrup, while the Tosa tea-flavored anmitsu (dessert bowl) style creation features sansho pepper jelly and black sugar syrup. These sophisticated flavor profiles provide a nuanced alternative to standard summer treats.

The sensory experience is further elevated by the use of one-of-a-kind handmade glasses crafted by the local “Small Glass Studio To-chi.” The collection features six colors representing the Kochi landscape, including the deep blue of the Pacific Ocean and the vibrant orange of local citrus. To further immerse guests in the region’s food culture, the hotel offers a “Tosa Supermarket Tour” led by OMO Rangers. During this guided experience, guests can discover and purchase the specific local ingredients and seasonings featured in their shaved ice, bridging the gap between the hotel’s culinary offerings and the city’s daily life.
