As the summer season arrives in Tokyo, Shinjuku Prince Hotel has announced a new series of creative shaved ice offerings at The Station Cafe Bar (B1). Starting July 17, 2026, the venue will serve three distinct varieties of kakigori (shaved ice), designed to provide a refreshing escape within the vibrant Kabukicho district. These seasonal desserts are crafted with a focus on complex layering and high-quality ingredients, catering to both traditional tastes and those seeking unconventional flavors.

Innovative Shaved Ice Inspired by Italian Cuisine
The standout addition to this year’s menu is the Margherita Shaved Ice, a savory-sweet innovation inspired by the kiln-baked pizzas served at the cafe. This creation utilizes a mascarpone tomato cream base, accented with mozzarella and a gorgonzola custard. To enhance the Mediterranean profile, it is served with a side of basil and olive oil, allowing guests to adjust the fragrance and depth of flavor as they eat. This unconventional approach reimagines the boundaries of the traditional Japanese summer dessert.

Layered Flavors Featuring Natural Shinshu Water
The foundation of each dish is ice made from deep natural water sourced from the Shinshu region, specifically Kamikochi. This results in a light, fluffy texture that melts instantly upon contact. Moving beyond simple syrup applications, the hotel has structured these offerings with multiple layers—similar to a parfait—incorporating jellies, puddings, and espuma. This architectural approach ensures that the taste and texture evolve as guests progress through the dish.

Three Distinctive Summer Creations
In addition to the Margherita, the lineup includes two dessert-focused varieties. The Japanese Peach and Earl Grey Shaved Ice features a whole peach compote paired with aromatic tea layers, including Earl Grey espuma and pudding, served with a concentrated tea syrup. For those preferring classic Japanese flavors, the Uji Matcha and kinako (roasted soybean flour) Shaved Ice incorporates warabi mochi (bracken starch dumplings), red beans, and dorayaki (sweet bean-filled pancakes). Each creation is priced at ¥2,000 and will be available daily during the afternoon service through September 30, 2026.
