Mesm Tokyo, Autograph Collection, situated in the Waters Takeshiba district, has introduced a seasonal culinary creation that reimagines the traditional dessert format. From July 1 to September 30, 2026, the hotel’s 16th-floor bar and lounge, Whisk, will serve a “Layered Parfait” designed to bridge the gap between a sweet course and a light meal.

A Sophisticated Roman Aperitivo
The concept draws inspiration from the 1960s Roman “Aperitivo” culture, evoking the atmosphere of a summer afternoon in the Italian capital. This iteration of the parfait is intended for leisurely consumption while overlooking the Tokyo waterfront, offering a flavor profile that balances salt and sweetness rather than focusing solely on sugar.
A Composition of Savory and Herbal Layers
The parfait is constructed with a complex architecture of flavors and textures. The top layer features prosciutto arranged in the shape of rose petals, served alongside fresh melon and accented with basil leaves and olive oil pearls. Beneath the surface, the glass reveals layers of refreshing yogurt mousse and fruit tomato jelly, followed by a combination of mascarpone mousse and pistachio ganache. The experience concludes with a base of lime and basil jelly, providing a crisp, aromatic finish.

Waterfront Dining at Whisk
Whisk, an artist-atelier-themed lounge, provides the setting for this seasonal offering with its panoramic views of Hamarikyu Gardens and Tokyo Bay. The parfait is priced at 2,800 JPY, with a set option including free-flow coffee or tea available for 4,000 JPY. Both prices include tax and service charge. The experience is available in limited quantities daily through the end of September.
