Yokohama Bay Sheraton Unveils Atori Signature Ramen

Yokohama Bay Sheraton Hotel & Towers has introduced a new signature culinary offering, Ramen "Atori." Positioned as a refined interpretation of the classic noodle dish, the bowl was developed through an internal competition among six culinary teams. The name "Atori" refers to the brambling, a migratory bird that visits Japan during the colder months, symbolizing the hotel"s role as a gathering place for travelers and locals alike.

A Signature Bowl Born from Passion

The creation of Atori was the result of a rigorous internal selection process aimed at defining a new standard for hotel dining. The goal was to create a dish that appeals to mature palates, balancing the comfort of ramen with the technical precision expected of a luxury hotel kitchen. The final recipe reflects a commitment to regional sourcing and long-form preparation techniques.

Meticulously Selected Ingredients and Craftsmanship

The foundation of the dish is a creamy tori-paitan (chicken white soup) achieved by simmering Choshu Kurokashiwa chicken bones, feet, and wings for ten hours. This rich base is seasoned with a salt-based sauce infused overnight with dried scallops, thick-cut bonito flakes, and Rishiri kelp. The noodles are crafted from "Ra-mugi," a wheat variety specifically developed for ramen in Fukuoka Prefecture. Each bowl is topped with Kujo green onions and a substantial slice of "Hama Pork" shoulder loin, which is marinated for 48 hours in Saikyo miso before being charcoal-grilled.

Artisan Presentation in Arita Ware

Visual presentation is central to the Atori experience. The ramen is served in modern Arita ware produced by Kinuemon Touen, a historic kiln in Saga Prefecture established in 1926. To elevate the aromatic profile, the dish is accompanied by Hararyokaku black shichimi, a traditional spice blend from Kyoto. The combination of the textured ceramic and the dark, fragrant spice provides a sensory experience that distinguishes it from standard street-side offerings.
