From September 1 to November 30, 2026, Courtyard by Marriott Hakuba will offer a seasonal dinner menu that interprets the autumn transition of Nagano’s Northern Alps through local gastronomy. Titled “Shinshu Blessings Dinner -Autumn-,” the menu at Dining & Bar LAVAROCK utilizes regional ingredients such as Shinshu Salmon, newly harvested Hakuba rice, and local mushrooms to reflect the vibrant foliage and geography of the surrounding landscape.

Visualizing the Hakuba Landscape
The “PRESTIGE” course level provides a sensory journey through the region’s specific terrain. The experience begins with a tartare of Shinshu Salmon and perilla, presented on a plate featuring a relief of the Hakuba mountain range. This is followed by a potage of Hakuba rice and mushrooms, a dish designed to mirror the scenery of the Aoni district’s terraced rice fields during the autumn harvest.

Forest and Harvest Flavors
The main courses emphasize the natural bounty of the Shinshu forests. A grilled lobster is served with a mushroom tapenade, while the signature meat dish features grilled Shinshu Alps beef loin. To represent the atmosphere of a deep autumn forest, the beef is smoked with apple chips—a reference to Nagano’s renowned orchards—and presented in a glass to concentrate the aroma.

A Regional Culinary Vision
Hotel Chef Takeichi Sugiyama developed this menu to highlight the majestic environment of Hakuba. The meal concludes with a refined local touch: a buckwheat dacquoise paired with ground cherry and a hojicha (roasted green tea) mont blanc. By incorporating these traditional Nagano staples into a contemporary format, the dessert provides a final taste of the season’s transition.

The dining experience is hosted at Dining & Bar LAVAROCK, where large windows offer views of the changing foliage, further connecting the culinary presentation to the physical environment of the Hakuba valley.
