Hyatt Regency Tokyo and Pierre Hermé Paris Mark 46 Years

To commemorate 46 years since its opening in the Nishi-Shinjuku district in 1980, Hyatt Regency Tokyo has partnered with Pierre Hermé Paris for a seasonal afternoon tea. The menu, titled “La Récolte de Shinjuku — 46 ans de Saveurs,” centers on a harvest theme, utilizing autumn ingredients such as chestnuts, pears, and hazelnuts to reflect the transition of the season.

A Harvest-Themed Patisserie Collection

The collaboration features six sweets designed by Pierre Hermé Paris. Among the highlights is the Macaron Éclat, which combines lemon with a pumpkin seed praline, and the Emotion Carré Blanc, a composition featuring pear. The collection also includes the Odyssée, a specialty that pairs brown sugar from Okinawa with the earthy textures of chestnuts and walnuts, alongside preparations featuring maple syrup and hazelnuts.

Seasonal Savory Selection by Hotel Chefs

The hotel’s culinary team has developed five savory dishes to complement the patisserie selection. The menu includes a Foie Gras Monaka (a crisp wafer sandwich) accented with port wine jelly, and an Iberico Ham and endive salad topped with caramelized hazelnuts. Guests are also served a seasonal Autumn Chirashi sushi and a mushroom and chestnut cream soup. A Truffle Cheese Danish, made with Gruyère and béchamel sauce, provides a fragrant, warm addition to the set.

Signature 46th Anniversary Mont Blanc

Available as an optional addition is a special edition of the hotel’s “Signature Mont Blanc.” This version uses chestnut paste from the French manufacturer Imbert and Madagascar vanilla beans. The dome-shaped dessert contains a chestnut mousse and house-made cassis jam, encased in vanilla chantilly and set upon a light meringue base. The acidity of the cassis is intended to balance the richness of the European chestnuts.
