Located in the heart of Kyoto’s Higashiyama district, Dhawa Yura Kyoto by Banyan Group has launched a new summer dining experience at its flagship restaurant, GRILL 54TH. Under the direction of Chef Yutaka Kudo, the “Wellbeing Buffet” emphasizes fresh, local ingredients served in an atmosphere that balances casual comfort with professional execution. The restaurant features a striking open kitchen and views of a serene bamboo garden, providing a tranquil backdrop for a menu designed to nourish both body and soul.

The Art of the Josper Grill: Signature Porchetta
The centerpiece of the summer menu is the “Kyoto Miyako Mochi Pork Porchetta,” prepared in a Josper Grill. This Spanish charcoal oven combines high-heat grilling with oven sealing to produce meat that is crisp on the exterior while remaining juicy within. The pork, known for its sweet flavor and tender texture resulting from a specialized bread-based diet, is seasoned with aromatic sansho (Japanese pepper) and herbs. Guests may also select other main dishes, including charcoal-grilled local fish served with gremolata or domestic beef sirloin.

A Refreshing Summer Citrus and Tomato Collection
Complementing the grilled mains is an extensive buffet featuring a “Tomato and Citrus Collection.” The spread includes creative Italian-inspired dishes such as cold pasta with sudachi (Japanese citrus), red shiso and mozzarella caprese, and charcoal-grilled chicken with orange. The vegetable offerings include crispy fried zucchini and seasonal herbs, emphasizing the garden-to-table focus of the wellbeing theme.

The dessert selection highlights seasonal fruits, featuring a lemon chiffon cake and a tart made with Kawachi Bankan—a variety often referred to as Japanese grapefruit. Other unique offerings include a tomato herb compote paired with lemon tomato jelly, providing a light conclusion to the meal.
