Hyatt Regency Tokyo has announced the launch of its new Bar Event Series, beginning with a collaboration featuring Hiroyasu Kayama, the owner-bartender of Tokyo’s Bar BenFiddich. Currently ranked 18th in The World’s 50 Best Bars 2025—the highest position for any Japanese establishment—Kayama is a central figure in the global cocktail scene. This one-night-only takeover on August 9, 2026, provides a rare opportunity to experience his craftsmanship within the setting of one of Shinjuku’s landmark hotels.

World-Class Mixology in Shinjuku
The event marks a significant moment for Shinjuku’s nightlife, bringing the intimacy of Kayama’s renowned bar to a larger audience. Known for his technical precision and deep knowledge of spirits, Kayama has earned international acclaim for elevating Japanese bartending. During the takeover, guests can witness his creative process firsthand as he prepares a selection of drinks designed specifically for this collaboration.

A Farm-to-Glass Philosophy
Kayama is celebrated for his “no menu” approach, typically creating bespoke drinks based on individual guest preferences. His signature style relies heavily on botanical elements, many of which are sourced directly from his family farm in Chichibu, Saitama Prefecture. For this Hyatt Regency Tokyo event, he has developed four original cocktails that highlight fresh herbs, global spices, and rare spirits, reflecting his commitment to the “farm-to-glass” movement.

The Atmosphere at Nineteen Eighty
The takeover will be held at Nineteen Eighty Lounge & Bar, located on the hotel’s second floor. The venue, which takes its name from the Hyatt Regency Tokyo’s opening year, is defined by three large chandeliers containing approximately 115,000 Swarovski® crystals. The evening offers two ways to attend: reserved table seating, which requires the purchase of a four-cocktail package and a food order, or a standing area near the bar for a more casual experience.
