Fukushima Terroir and Award-Winning Sake at Mercure Urabandai

Mercure Urabandai Resort & Spa has announced a seasonal program for the summer of 2026, inviting travelers to experience the culinary heritage of Fukushima Prefecture. From July through September, the resort will highlight regional ingredients and award-winning sake within its all-inclusive framework, set against the natural landscape of the Bandai-Asahi National Park.

A Culinary Journey Through Fukushima’s Terroir

The resort’s new menu emphasizes the flavors of the Aizu region, specifically featuring Aizu Beef. This premium Wagyu is certified for its marbling and texture and is served as a cold shabu-shabu (thinly sliced boiled meat) salad. Guests can also participate in a specialized tasting of basashi (horse sashimi), which includes three distinct cuts: loin, fillet, and thigh. These are paired with local Yamasio mountain salt and a traditional spicy miso. The culinary program also extends to the Fukushima coast with Joban Monkfish, a regional delicacy served as karaage (deep-fried) and enriched with monkfish liver.

Award-Winning Sake and Regional Specialties

Fukushima is recognized as a leading sake-producing region, frequently securing the highest number of gold medals in Japan’s national sake competitions. Beginning in July, the resort will offer curated sake tasting plans that allow guests to pair these award-winning local brews with regional soul foods. The buffet also features local staples such as Kitakata Ramen and Cream Box—a thick-sliced milk cream toast that is a popular local favorite. These offerings are designed to provide international visitors with a direct connection to the authentic food culture of the Aizu region.

All-Inclusive Relaxation in the Heart of Urabandai

Located an eight-minute walk from the emerald-hued Goshikinuma lake district, the resort provides an environment for both outdoor activity and relaxation. Following a day of trekking or cycling around Mt. Bandai, guests have access to open-air onsen (hot spring) baths. The women’s indoor hot spring features a unique Emi-yu fruit and flower bath, offering a seasonal, fragrant experience. The all-inclusive stay covers meals, lounge access, and hot spring entry, facilitating a seamless stay within one of Japan’s most prominent natural landscapes.
