The sweets selection brings the inhabitants of Sumida Aquarium to the table through precise confectionery techniques. A Goldfish Jelly with milk ice mimics the ‘Edorium’ exhibit, while a Matcha Shortcake features three varieties of garden eels emerging from a base of green tea sponge. The Rock Choux Cream is modeled after the aquarium’s penguin pool, specifically honoring penguin chicks born in the spring of 2026. Other creations include a milk chocolate mousse shaped like a fur seal and a pink jellyfish mousse tart, each designed to reflect the playful nature of the aquatic subjects.
