Kissho Yamanaka: Supporting Noto Recovery Through Gastronomy

Kissho Yamanaka, a ryokan (traditional inn) situated along the Kakusenkei Gorge in Ishikawa Prefecture, has introduced a dedicated stay plan featuring Nanao oysters to support recovery efforts in the Noto Peninsula. The oysters are notable for having survived the tsunami following the 2024 earthquake as larvae—a resilience that has earned them a reputation as “miracle” oysters among local producers. For each guest who stays under this plan, the property will donate 500 yen to Daiki Co., Ltd., a producer in Nanao City, to aid in the restoration of the region’s aquaculture industry.

Culinary Restoration and Seasonal Flavors

The centerpiece of the experience is the “Nanao Oyster Kaiseki,” a multi-course dinner served at the Benihana restaurant. The menu utilizes the plump, flavorful oysters in various cooked preparations to ensure safety and quality, including sake-steamed versions, jibuni (a traditional Ishikawa duck and vegetable stew), and oysters grilled with miso or herb butter. This gastronomic focus allows travelers to contribute directly to the local economy while experiencing the specific terroir of the Hokuriku region.

Regional Sake and Traditional Hospitality

Complementing the meal, guests are provided with unlimited access to 14 varieties of local Hokuriku sake at the Benikura bar. This beverage program is part of a broader suite of complimentary hospitality services designed to immerse visitors in the local culture. These include afternoon tea featuring Kaga pancakes, private access to hot spring baths, and nightly performances of “Yamanaka-bushi,” a traditional folk dance. Late-night servings of Kaga pudding further emphasize the property’s commitment to regional sweets and flavors.
