Hilton Tokyo Odaiba has announced the launch of the first Japanese Afternoon Tea at its signature restaurant, Sakura. Set against the backdrop of the Tokyo Bay waterfront and a manicured Japanese garden, the new offering departs from conventional Western tea service to focus on the textures and flavors of washoku (Japanese cuisine). The experience is designed around a theme of summer coolness, incorporating seasonal ingredients and traditional confectionery techniques.

A Seasonal Symphony of Japanese Sweets
The tea service centers on a collection of sweets that evoke the atmosphere of a Japanese summer. Highlights include nerikiri—a traditional sculpted confection—depicting sweetfish swimming in a clear stream, and warabi mochi served with kinako (roasted soybean flour) and azuki beans. The tray also features a smooth pumpkin and soy milk mousse, alongside fresh seasonal fruits such as watermelon, presented to reflect the tranquility of the restaurant’s garden setting.

Savories Crafted by Specialized Chefs
Distinct from standard tea menus, the savory selection at Sakura is prepared by chefs from the restaurant’s dedicated culinary counters. The eight-item lineup includes black wagyu roast beef with a concentrated black vinegar sauce from the teppanyaki station, and anago (sea eel) tempura wrapped in fine golden threads. The sushi counter contributes three varieties of temari sushi—small, ball-shaped sushi—featuring sea bream, salmon, and other seasonal seafood, ensuring each bite reflects the expertise of specialized Japanese disciplines.

Interactive Shaved Ice and Premium Beverages
To conclude the experience, guests are invited to a self-service kakigori (shaved ice) station. This interactive element allows diners to shave their own ice and customize it with six varieties of syrups and toppings, including matcha, kinako, and condensed milk cream. The meal begins with a welcome drink of non-alcoholic sparkling sake and dashi, followed by unlimited access to a beverage menu that includes wakan-cha (Japanese herbal tea), amazake (sweet fermented rice drink), and roasted green tea.
