From September 1 to November 12, Hilton Tokyo introduces the ‘Wizard’s Bakery’ Autumn Petit Boulangerie at Bar & Lounge ZATTA. This seasonal afternoon tea departs from traditional cake-heavy menus, focusing instead on a collection of petite, artisanal breads. Crafted by Head Baker Tsuyoshi Yuda, the experience emphasizes natural fermentation and the rich, earthy flavors of the Japanese harvest season.

The Wizard’s Bakery Theme
Set against the backdrop of the Shinjuku skyline, the tea service utilizes a golden birdcage-style stand adorned with black ribbons and whimsical motifs. Head Baker Yuda, known for his expertise in natural yeast, has designed each piece to resemble objects from a fantasy workshop, such as magic wands and alchemical ingredients. The presentation transforms standard bakery items into a narrative-driven experience that balances wit with technical baking precision.

Creative Autumn Bread Selection
The menu centers on seasonal staples including pumpkin, chestnuts, and sweet potato. Highlights include the ‘Alchemist’s Composition,’ a pumpkin pudding bread that guests finish by pouring a dark sauce from a glass test tube. The ‘Sage’s Mont Blanc Spoon’ offers a rum-infused chestnut cream served on a wing-shaped base, while the ‘Candle that Doesn’t Illuminate Secrets’ is a gianduja muffin coated in hazelnut white chocolate, designed to resemble a flickering candle.

Textural variety is a key element of the selection. The ‘Apprentice Baker’s Wand’ is a scone made with sweet potato and black sesame, intended to be dipped into a vibrant purple yam potage. Other sweet offerings include the gianduja-filled candle muffins and various breads incorporating seasonal nuts and fruits.



Savory Delights and Organic Teas
The savory portion of the menu maintains the bakery theme with sophisticated compositions. The ‘Late-Night Baker’s Tartine’ combines smoked chicken with the crunch of lotus root on a crisp baguette base. The ‘Black Mushroom of the Magic Forest’ uses bamboo charcoal dough to create a dark, spherical bun filled with truffle-infused cream cheese.

To balance the bread selection, the service includes a fresh salad and a choice of 20 beverages. The drink menu features organic selections from ART OF TEA, such as ‘Cinnamon Fig’ and ‘Dark Chocolate Peppermint,’ alongside original mocktails. The ‘Magic Drop,’ a butterfly pea tea mixed with osmanthus syrup, changes color when citrus is added, echoing the alchemical theme of the bakery.
