The offering focuses on the harvest from Japan’s northernmost prefecture, incorporating ingredients such as pumpkin, mushrooms, and apples into a selection of sweets and savories.

Regional Flavors and Seasonal Sweets

The centerpiece of the tea service is a pumpkin Mont Blanc, crafted with Hokkaido-grown pumpkin and flavored with rum-soaked raisins and cinnamon. The menu also highlights specific regional producers, including a Far Breton made with non-alcoholic wine from NIKI Hills Winery in Niki Town and an amazake (sweet fermented rice drink) blancmange utilizing sake lees from the Kunimare Distillery. Other desserts include a Tarte Tatin featuring Hokkaido apples.
